I agree, you don't need an internet connection on everything.

Doom Eternal It's one sale on Steam. Also got Quake II: Quad Damage and Doom 3: BFG Edition from a sale on GOG.

Even worse is when a game is good at the start but has moments of slough in the middle or end which kills ideas of replaying the game.

I agree with this, the problem isn't difficultly levels, it's when the gameplay mechanics themselves get dumbed down or removed.
