Headcrabs have a big body (compared to their legs) and they are "meaty".

Spiders have a relatively small body with long thin legs

Interestingly enough, in Half-Life 2, Vortigaunts (i think in Black Mesa East) are seen preparing headcrab meals. Of course, there isn't really much else for the rebels to eat, eh?

I am thinking that headcrabs might actually taste something like crab meat. It might be how they (the citizens of Earth after HL1) named it. Headhumper + Crab = Headcrab.

Bullsquids, on the other hand, taste like caterpillars.
